I have some good childhood memories of my mother making pancakes on a weekend morning and putting syrup and butter on a stack.
This holiday breakfast is a favorite of Innkeeper Kathy. We are all thankful for her superb cooking and baking skills!

Buttermilk Pumpkin Pie Pancakes
1 ¼ C all purpose flour
¼ C sugar
2 tsp baking powder
½ tsp baking soda
¾ salt
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ground ginger
⅛ tsp ground cloves
1 C buttermilk
½ C pumpkin puree
1 large egg
3 T oil
+ oil for griddle
Whisk all dry ingredients in a bowl.
In a liquid measuring bowl mix wet ingredients with large spoon.
Add wet mixture to dry ingredients and stir till just combined.
Oil your hot griddle or pan.
Using a ⅓ measuring cup pour the batter onto the griddle or pan.
When bubbles appear on the surface (3 min.) flip and cook the other side till golden.
9 pancakes
Serve with syrup
