Look What's Blooming This Spring

We invite you to see what’s blooming this spring at the Fox & Hound! This new season brings several exciting, tasty, and creative breakfast dishes to add to our very popular, beloved breakfasts that keep our guests coming back again and again.  

Your innkeepers participated in an inspirational cooking session taught by Shelley Wiseman, owner of the renowned Shelley’s Table in Lambertville, NJ. Shelley’s accolades include honing her trade in France, founding a French cooking school in Mexico City, adding to her career while employed at popular French restaurants in NYC, and holding the prestigious title of Food Editor at Gourmet Magazine.

She influenced us with her food creativity, new flavor stories and seasonal pairings. We look forward to sharing what we learned with you!

 

Chilaquiles Verde 

For an international flair we will be serving a festive Mexican breakfast of corn tortillas sauteed in a mild green tomatillo salsa topped with a perfectly poached egg, creme, cotija cheese, ripe avocado and seasoned with fresh cilantro. This dish is especially tasty accompanied by one of our new nectars – cantaloupe or watermelon blended with lime and ice. Delicioso!

 

Egg Roulade 

From the French meaning “to roll”, we present this flavorful egg dish with sautéed spinach, onion and goat cheese rolled into light, airy, baked eggs served on a delicate roasted bell pepper sauce and garnished with a dill.

Sweet and Savory Crepes 

Our favorite savory crepe is made into a perfect little pocket with Black Forest ham, grated Gruyere cheese and an over-easy fried egg, seasoned to perfection. Or, how about a sweet crepe with a squeeze of lemon, dusted with sugar and filled with a light yet decadent banana syrup?!

Another wonderful benefit of spring is that our herb garden has begun to bud. Now we can add our own home-grown flavors to all the new and guest-favorite dishes. And, if you want to know more about all the other new breakfast offerings, you will just have to come visit us.... You will NOT be disappointed!

Native Wildflower Meadow Update 

The first sprouts of our native wildflower meadow are just peeking out. There are 35 different species planted in the ¼ acre dedicated area in front of the inn including Wild Bergamot, Butterfly Milkweed, Basil Mountain Mint, New England Aster, and so many more beautiful blooms.

Even though the meadow is still in its infancy, our guests can start to see it really beginning to take shape starting in mid-May. Guests will see an ever-shifting panorama of colors and textures in this dynamic wildflower ¼-acre gated space.  

This intentional native wildflower display is the only one of its kind in New Hope and the gated garden path is for the exclusive use of Fox and Hound guests.

We are already imagining a Summer and Fall with our guests strolling the circular garden path of a meadow that has come alive with the soft rustling of grasses and visual impact of lavender, orange, yellow, white and purple flowers. You can also experience it from the front patio and several guest room windows.

You will see golden rods and asters glowing in the evening light, cricket’s chirping and the flicker of fireflies. A wonderful relaxing breath of fresh air.  

Then, as you stay with us over the seasons, you will see the meadow grow and change with diverse shapes, colors, blooms and relaxing sounds and birdsong offering our guests a unique and scenic visiting experience. Each season will bring new colors and textures.  

Not just beautiful and ever-changing with the seasons, the meadow also supports the local ecosystem and pollinators like the Monarch butterfly. 

Here are just a few examples of the environmentally impactful ways of our meadow: 

  • Meadows sequester more carbon than lawns and even more than some forests. 

  • Meadows save water by not needing to be watered once they are established and allow more pure water to soak into the local Aquatong Watershed. 

  • Meadows provide clean air. 

  • Meadows provide food and shelter for local wildlife thus creating a biodiverse ecosystem. 

  • Meadows only need to be cut once a year, so we are doing our part to lessen emissions and noise created by lawn equipment. 

  • Meadows provide a habitat for native birds bringing about a beautiful birdsong soundscape.
