Ingredients:
1 Sheet of puff pastry, thawed

2 red apples

Juice of half a lemon

3 Tblsp apricot preserves

Cinnamon

Flour for dusting countertop

Powdered sugar for decorating just before serving

Instructions:

  1. Preheat oven to 350 degrees.  Spray a muffin pan with non-stick spray.

  1. Roll out the puff pastry onto a lightly floured counter until about 12 x 9 inches rectangle.  Cut the dough into 6 strips, each about 2 inches wide and 9 inches long.

  1. Fill a large bowl halfway with water and the lemon juice.  Cut apples in half, remove the core and thinly slice (approx 1/8 in thick).  As you cut them, place them in the lemon water (to avoid their turning brown).  Microwave for approx 3 min until they bend easily and don’t break.

  1. In a small bowl, stir the apricot preserves with 2 Tablespoons of the hot lemon water and spread thinly onto the strips of puff pastry leaving a little margin of uncoated dough on all sides of the strips.

  1. Drain apples well and arrange slices on each strip of dough with end with red peel facing out and slightly overhanging the long edge of each strip. Each slice should overlap the previous at about the halfway point on each slice. Sprinkle apple slices with cinnamon.

  1. Fold up the dough enveloping the apple slices (except their tops with red peels you want sticking out) and gently roll each slice creating the rose.  When finished making each rose, pinch the dough to seal and keep it together and place into the muffin pan.

  1. Bake for about 30-35 minutes until golden brown.  Cool and serve with a dusting of powdered sugar.
