Irish Soda Bread
Not as sweet as one of our famous sweet breads, this slightly crusty but tender, no yeast or kneading required bread tastes delightful on a March Day warmed with butter or jam and enjoyed with a cup of tea or a hot bowl of soup. This recipe comes from our Innkeeper, Trish's, Irish side of the family. May the luck of the Irish be with you... Always!
Ingredients:
4 cups flour
3 Tbsp sugar
1 tsp baking soda
1 tsp salt
6 Tbsp unsalted cold butter
1 ¾ cups buttermilk
1 egg
1 ¼ cups yellow raisins
Instructions:

Preheat oven to 400 degrees and spray a loaf pan with non-stick spray.

In a large bowl, whisk the dry ingredients (except raisins).

Cube the cold butter and cut in to dry ingredients until well incorporated.

In a medium sized bowl, whisk the buttermilk and egg and then stir it into the dry ingredients just until partially combined. Add in the raisins and fold with rubber spatula until combined.

Transfer dough to the loaf pan and bake about 50-55 minutes. Cool loaf on a wire rack and serve warm with butter.
